Primula recently asked 2,000 UK adults to pick their favorite winter warmers and topping the charts are cottage pie, lasagna and roast dinners. Other dishes that make up the most popular list include beef stew, spaghetti bolognese, and cauliflower cheese, as well as mac and cheese, fish and chips, and sausage and mash.

Primula also found that while six out of 10 people rate winter heaters as one of their favorite things about the colder season, 74% take shortcuts when cooking due to lack of time.

Now cooking with Primula Cheese is great because it can pack in the flavor but take the clutter away, plus it melts wonderfully. So I took on the challenge of creating a much loved cake, using Primula to save time and add flavor.

So, let’s make a big hearty Cheesy Leek and Potato Pie that will easily feed four to six, with enough for a few seconds.

1 kg (2.2 lb) baby potatoes
1.8 oz (50 g) butter lightly salted and a little for greasing
550 g (1.2 lb) leeks (4 medium), cut and sliced
2 garlic cloves, minced
200 g (7.1 oz) petit pois
pinch of salt and pepper
For the sauce
1.2 pt (550 ml) whole milk
50 g (1.8 oz) plain white flour (all-purpose flour)
50 g (1.8 oz) lightly salted butter
2 tubes of Original Primula Cheese

To the top
1 sheet of puff pastry in a ready roll
1 free-range eggs

Place the potatoes in a large pot of cold water and bring to a boil. Cook for 8 minutes until parboiled. Drain and rinse with cold water. Set aside to cool

Each step to make the filling only takes a few minutes, you can do it one at a time at a leisurely pace or have multiple trays at the same time to speed things up if you want.

Using Primula cheese in the sauce makes it so delicious and creamy, and using one of the different flavors is such an easy way to add an extra dimension to your cake. Save time by not grating all that cheese for the sauce too!

Will I need any special equipment for this recipe?
Everything you need will be close at hand in most kitchens. Once the vegetables are prepared with a cutting board and knife, you will need a saucepan to parboil the potatoes and then make the cheese sauce. A frying pan to fry the leeks and garlic and a baking dish to make the cake.

Where can I buy Primula cheese?
Primula is a UK based squeezed cheese company that started life in 1924, you can usually find it in larger supermarkets or their online store. If you are not in the UK, you can try using an alternative cheese spread.

Is the leek and potato pie with cheese suitable for vegetarians?
Yes, as long as you use a vegetarian-friendly Primula cheese, some of the flavors contain ham or fish, so check which one you buy at the grocery store. This is such a hearty and comforting vegetarian dinner, perfect to warm up a gray day.

Is the leek and potato pie with cheese suitable for vegans?
This recipe would not be suitable for vegans as it is made with cow’s milk, butter, and Primula cheese, plus a beaten egg on top of the batter.

I haven’t tried making a vegan version of this cake yet, but you should be able to get pretty good results as most of the prepared cakes are vegan.

The main hurdle is the cheese sauce you can make with a neutral milk alternative, vegan butter, and nutritional yeast. To replace the egg wash, you can use some melted vegan butter or a milk alternative.

Is Cheesy Potato and Leek Pie Gluten Free?
For our Cheesy Leek Potato Pie I’ve used a ready-made dough that’s made from wheat flour, so it wouldn’t be suitable for someone who needs to avoid gluten. Cheese sauce also contains wheat flour, which is used to thicken the sauce.

If you want to make this cake gluten-free, just go for a gluten-free prepared cake and be sure to use gluten-free flour in your cheese sauce. Check that anything else you want to serve with the cake is gluten-free as well.

Is Cheesy Leek Potato Pie Ketogenic?
With the potatoes and puff pastry, this recipe is too high in carbs to be considered ketogenic.

Is it safe to eat cheesy potato leek pie while pregnant?

This cake is packed with potatoes and veggies, making it a contained meal in one. If you like, you can serve your cake with steamed carrots and broccoli or some leafy greens.

I don’t have new potatoes, can I use a different kind?
I love using new potatoes in this recipe as they are small and usually don’t need to be peeled, the skins add a bit of texture to the cake.

That said, if you don’t have new potatoes, you can use any other type, rub them well and leave the skin on if you want, or peel them if you prefer.

Any large potato will need to be cut into pieces of about 1.5 inches (4 cm). You can also use different veggies instead of potato, cauliflower, or broccoli which work well, they will only need to be parboiled for 5 minutes.

Can I add more veggies to my Cheesy Leek Potato Pie?
The cake is already packed, so you won’t be able to add more veggies without substituting something. The easiest way to have more veggies with this meal would be to serve them on the side.

How should I store my Cheesy Leek Potato Pie?
Leftovers should be chilled and stored in the refrigerator or freezer. Carefully transfer the pie filling to a suitable container and then put the dough lid back on top.

How long does the leek and potato pie with cheese last?
This cake will keep up to 4 days in the refrigerator, or if you have frozen a little on the day of its preparation, it will keep up to 2 months in the freezer.

The easiest way to reheat this cake would be to microwave it, however this will make the batter soggy.

To reheat in the oven, preheat the oven to 180C / 356F (160C fan / 320F fan), if you are heating the leftovers, transfer them to your small baking dish so the filling does not spread too much, put the batter back . above.

Cover with aluminum foil and heat in the oven for 15 minutes, at this point remove the aluminum foil and check how the cake is, return to the oven for 5 more minutes so that the dough is crisp and finish heating the filling. Make sure food is piping hot before serving.

Before the pie goes into the oven, make sure you’ve punched a hole in the batter to let the steam out and give the top a beaten egg to help create that beautiful golden top. It should take about 30 minutes for the cake to cook to perfection, you can keep an eye on it through the oven door.
